If you've been hesitant to try making homemade chocolate treats because it seems difficult for beginners, this cream cheese raw chocolate recipe is perfect for you.
No complicated techniques required - simply mix the ingredients and chill to create a luscious "Ganache" experience.
Ganache is made by combining equal parts of chocolate and cream cheese. It's a great way to use up any leftover cream cheese from making cheesecakes or other desserts, so nothing goes to waste.
Ingredients
- Chocolate - I tried making the recipe using both chocolate with about 55% cocoa content and chocolate with 70% cocoa content. With the 55% cocoa chocolate, I could taste a pleasant balance between the cream cheese and chocolate flavors. On the other hand, the 70% cocoa chocolate had a stronger bitter taste of chocolate, and the cream cheese flavor was not as prominent. I believe that using chocolate with a lower cocoa percentage will allow the cream cheese flavor to come through more. So, choose your chocolate based on your preference.
- Nuts - The original recipe seems to use unsalted mixed nuts. Feel free to use your favorite or whatever you have at home. For this recipe, I used macadamia nuts.
- Cream cheese
- Cocoa powder
Instructions
Crush the nuts by placing them in a bag and using a rolling pin to break them into larger pieces. It's fine to have bigger fragments to retain the texture.
Place the chocolate in a bowl and melt it using either the microwave or a double boiler. Once melted, add the cream cheese and crushed nuts to the chocolate and mix them together.
Shape the mixture into a square, and wrap it tightly with plastic wrap. Chill it in the refrigerator for about 1 hour to set.
Sprinkle cocoa powder on top according to your preference. Use a heated knife to cut into desired pieces. Wipe the knife with kitchen paper after each cut to achieve clean and neat edges.
Chocolate Truffle Version Recipe
You can also make chocolate truffles using the same ingredients.
(Mix the ingredients together and refrigerate the chocolate cream until firm).
Cut into appropriate sizes with a knife and roll into rounds with your hands.
Sprinkle cocoa powder on top and your chocolate truffles are ready!
Storage
Store in the refrigerator and consume within 2-3 days. For a smoother texture, let them sit at room temperature for about 10 minutes before eating.
If you plan to carry them as gifts or during colder seasons, they should be fine outside the refrigerator for up to half a day.
