Easy Snack Recipe: Chocolate x Almonds!

Almond Rocky Chocolate is a delectable treat created by blending melted chocolate with roasted almonds. The name 'rocky' originates from the English word 'rock' and describes its rough and uneven texture.

While it's a classic combination, the delightful taste of the crunchy almonds and the rich bitterness of the chocolate is truly satisfying.

While you can simply use almonds as the filling, in this recipe, we've taken it a step further to add the healthy goodness of oats and some leftover orange peel.

The refreshing flavor of the orange peel complements the chocolate remarkably well, giving it an enhanced taste reminiscent of orangettes. If you have some on hand, be sure to include it for an extra burst of deliciousness.

Ingredients

  • Chocolate - I used Callebaut chocolate with a 70.5% cocoa content. It's recommended to use a higher percentage of dark chocolate for a richer flavor. (Caution! Callebaut's chocolate is in the form of chocolate chips for easy melting, but not chocolate chips for baking! ( chocolate chips for baking is highly resistant to heat and does not melt easily.)
  • Sliced Almonds - While many French rocky chocolate recipes call for finely chopped almonds, we opted for sliced almonds as they are more readily available.
  • Oatmeal - I used rolled oats for a textured consistency.
  • Candied orange peels - While optional, adding orange peel brings a refreshing citrus flavor, similar to orangette candies.

INSTRUCTIONS

アーモンドを170度のオーブンでうっすらと焼き色がつくまで10分ほど焼きます。

Roast the almonds in a preheated oven at 170°C (340°F) until they are lightly golden, for about 10 minutes.

チョコレートをレンジまたは湯煎にかけて溶かします。
スライスアーモンド、オレンジピールを加えて手早くチョコレートを全体に絡めます。

Melt the chocolate in the microwave or using a double boiler. Add the sliced almonds and orange peel, and quickly mix them into the chocolate until well coated.

スプーンなどを使ってオーブンシートを敷いたバットなどに置きます。

Place the mixture onto a baking sheet-lined tray or baking pan using a spoon.

冷蔵庫で20分ほど、チョコレートが固まるまで冷やします。

Chill the tray in the refrigerator for about 20 minutes, or until the chocolate sets.

It also looks cute in a small semi-circular silicone mold.

小さい半円のシリコンモールドに入れてもかわいく仕上がります。

Storage

Almond Rocky Chocolates can be stored for about 3 to 5 days. Place them in a sealed container and store at room temperature in a dark, cool place away from direct sunlight.

Equipment

You can also shape the Almond Rocky Chocolates by placing them on a baking sheet, but they can turn out cute and nicely shaped when placed in silicone molds or similar containers.

Rock Chocolate

Place the mixture onto a baking sheet-lined tray or baking pan using a spoon.

Chill the tray in the refrigerator for about 20 minutes, or until the chocolate sets.
