Ingredients
- 110 g unsalted butter, softened
- 60 g powdered sugar
- 1 egg yolk
- 150 g cake flour
- your favorite jam, for filling cookies
Instructions
- Preheat oven to 170°C | 335°F.
- In a large mixing bowl, cream together the butter and powdered sugar for 4-5 minutes until well combined.
- Mix in the egg yolk until fully combined.
- Stir in flour until incorporated.
- Roll dough into 0.5 inch balls (about 10g each).
- Use your thumb (or the measuring spoon) to press an indentation into each ball of cookie dough. Spoon ½ teaspoon of jam into the indentation in each one.
- Bake at 170°C | 335°F for about 14 minutes or until the cookies are set. Cool on baking sheets before serving.
