''Baci Di Dama'', it's named for their shape resembles the lips of a lady intent on kissing. These little Italian sandwich cookies filled with chocolate are the perfect accompaniment to an after-dinner espresso.


Ingredients

Scale

For the cookies

  • 100 g unsalted butter, cut into small cubes
  • 80 g sugar
  • 60 g almond flour
  • 40 g hazelnut flour
  • 100 g all purpose flour

For the filling

  • 100 g bittersweet or semi-sweet chocolate , chopped

Instructions

Dough:

  1. In a large bowl, add sugar, almond flour, hazelnut flour and unsalted butter.
  2. Mix the ingredients together until the butter is evenly dispersed, and the dough is smooth.
  3. Add the flour, mixing until combined.
  4. Chill the dough for about 1 hour.

Shape and Bake:

  1. Cut off equal-sized pieces and roll into a ball.
  2. Place on a rimmed baking sheet lined with parchment (preferable to use to use silicone mat). Repeat with remaining dough, spacing balls 1 inch apart.
  3. Bake for 15 minutes at 320°F (160°C), until they are set to the touch and lightly golden.

Filling:

  1. Microwave or melt chocolate in a heatproof bowl set over a pan of simmering water.
  2. Let cool until thick and spreadable.

ASSEMBLE:

  1. Put a small spoonful of chocolate on one cookie and place another one on top.
  2. Once filled, let chocolate firm before serving.
