For the cookies
- 100 g unsalted butter, cut into small cubes
- 80 g sugar
- 60 g almond flour
- 40 g hazelnut flour
- 100 g all purpose flour
For the filling
- 100 g bittersweet or semi-sweet chocolate , chopped
Instructions
Dough:
- In a large bowl, add sugar, almond flour, hazelnut flour and unsalted butter.
- Mix the ingredients together until the butter is evenly dispersed, and the dough is smooth.
- Add the flour, mixing until combined.
- Chill the dough for about 1 hour.
Shape and Bake:
- Cut off equal-sized pieces and roll into a ball.
- Place on a rimmed baking sheet lined with parchment (preferable to use to use silicone mat). Repeat with remaining dough, spacing balls 1 inch apart.
- Bake for 15 minutes at 320°F (160°C), until they are set to the touch and lightly golden.
Filling:
- Microwave or melt chocolate in a heatproof bowl set over a pan of simmering water.
- Let cool until thick and spreadable.
ASSEMBLE:
- Put a small spoonful of chocolate on one cookie and place another one on top.
- Once filled, let chocolate firm before serving.
