These chocolate brownie cookies are crackly crusts and soft fudge centers, all chocolate brownies character in cookie form! Try this recipe, super quick & easy to make!
Ingredients

- 100 g chocolate
- 30 g unsalted butter
- 1 egg
- 60 g light brown sugar
- ½ tsp vanilla extract
- 20 g all-purpose flour
- 10 g cocoa powder
- ¼ tsp baking powder
- a pinch of salt
Instructions
- Preheat oven to 175°C | 350°F.
- Melt the butter and chocolate together in a microwave or in a bowl set over a pan of simmering water.
- Combine the eggs, brown sugar and granulated sugar together in a large mixing bowl.
- Slowly pour the chocolate mixture into the egg mixture until combined. Also add vanilla extract.
- Add the sifted flour, cocoa powder, baking powder and salt, using a rubber spatula to fold it in until just combined.
- Drop the batter onto a baking sheet 2-large tablespoon. (Or a using piping bag)
- Bake at 350°F for 7-9 minutes or until the cookies are crinkled and look puffy. Do not over bake. This is very important for keeping the cookies soft!
- Let them cool on the baking sheet for about 5minutes. Then transfer them to a wire rack to finish cooling.
