Ingredients

- 120 g unsalted butter, softened
- 100 g granulated sugar
- 100 g light brown sugar, (cassonade)
- 185 g peanut butter
- 1 large egg
- 1 tsp vanilla extract
- 180 g all-purpose flour
- ¾ tsp baking powder
- ¼ tsp salt
Instructions
- Preheat oven to 175°C | 350°F.
- In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar for 4-5 minutes until well combined.
- Add in the peanut butter and continue mixing until well combined.
- Mix in the egg and vanilla extract until fully combined.
- Stir in flour, baking powder and salt.
- Roll dough into 1.5 inch balls (about 30g each).
- Bake at 350°F for 9-10 minutes or until the cookies look puffy and the tops are set. Do not over bake. This is very important for keeping the cookies soft!
- Let them cool on the baking sheet for about 5minutes. Then transfer them to a wire rack to finish cooling.
