Semi-baked Cheesecake
- 300 g cream cheese
- 240 g sour cream, (or crème fraîche épaisse)
- 100 g granulated sugar
- 3 eggs
- ½ tsp vanilla extract
Topping
- 150 g sour cream, (or crème fraîche épaisse)
- 10 g granulated sugar
Instructions
- Preheat the oven to 280°F (140°C).
- Line a 20cm loaf pan with baking paper.
Semi Baked Cheesecake
- Beat cream cheese until smooth, soft and creamy. Then add the sugar and stir well.
- Add the eggs, one at a time, beating after each addition. Add vanilla extract and stir.
- Add the sour cream, beat until incorporated.
- Strain the mixture and pour into prepared pan. Place round baking pan onto oven rack. Set loaf pan in center of baking pan. Pour hot water into bottom of round baking pan.
- Bake 1hour until mixture begins to puff slightly around edges. It's ok if center may sink slightly.
Topping
- Prepare the sour cream topping. Place sour cream in a medium sized bowl, stir in the sugar until smooth.
- Pour sour cream topping over semi-baked cheesecake.
- Refrigerate well before serving.
