Here's a recipe for fluffy pancakes that are made using only oat flour, without any wheat flour. With just 4 ingredients and a simple mixing process, it's a very easy recipe to follow.

What is Oatmeal Flour
Oat flour is a powdered form of oats.
Commercially available oats are typically sold in their whole grain form, which is commonly used. However, using whole oats alone can result in a somewhat dry and crumbly texture, as they have difficulty retaining moisture. It is not possible to achieve a fluffy texture in bread or cakes using only whole oats. However, by using oat flour as a substitute for wheat flour, you can achieve a fluffy texture without the need for other types of flour.
Even without specifically designed recipes for oat flour, you can simply replace the amount of wheat flour in your existing recipes with oat flour to achieve similar results. This makes it incredibly convenient.
However, personally, I've noticed that oat flour tends to yield slightly denser results. To achieve the same fluffy texture as when using wheat flour, it's advisable to slightly increase the amount of liquid in recipes, such as water or milk.
How to Select Oatmeal Flour
It is sold labeled as "oatmeal flour" or "oatmeal powder". Be aware that "oatmeal" alone is usually sold in granular form.
Oatmeal itself does not contain gluten, but the product is likely to contain gluten in the manufacturing process. Choose products that are labeled "gluten-free" on the package, if necessary.
I bought commercial oatmeal, but I have also heard that oatmeal sold in granular form can be powdered in a blender.

- Baking powder
- Milk
- Egg
Instructions
Sift oat flour and baking powder into a bowl.
Make a hollow in the center and pour in the milk and beaten egg.
Mix well with a whipper.
Bake without oil in a Teflon pan or on a hot plate Take about ⅔ of a ladle of batter over medium heat and pour it into the pan.
When small holes appear on the surface and it looks dry, turn it over.
Bake for 2 to 3 minutes more.
Feel free to top the finished pancakes with butter, honey, maple syrup, or any other toppings of your choice.
Tips for cooking pancakes
After each pancake, you can lower the temperature of the pan by wiping it with a damp cloth or running it under cold water. This will help ensure that the surface of each pancake turns out beautifully.
When the frying pan is too hot, the moment you pour the batter onto it, it immediately starts cooking from the point of contact with the pan, resulting in uneven and imperfectly round pancakes. Additionally, the baking powder in the batter reacts quickly, causing bubbles to form and creating uneven browning.
Excessive heat also leads to excessive shrinkage during cooking. However, if you want to achieve a desirable browning effect, it is recommended to preheat the frying pan thoroughly. In Russian pancakes, known as blini, for example, a darker, more browned appearance is often desired.
Therefore, there is no definitive answer as to which method is correct. However, in this case, to achieve consistent browning and maintain a round shape, the pancakes are cooked by cooling the frying pan between each batch.
Storage
The best way to enjoy oatmeal pancakes is to eat them fresh off the griddle!
If you have leftover pancakes that you can't finish, it's best to consume them at room temperature within the same day.
If you choose to refrigerate them, they should be consumed within 2-3 days. For freezing, they can be kept for approximately 1 month.
Equipment
A Teflon coated frying pan does not need to be oiled, and the pancakes turn out beautifully.
I have been using Tefal frying pans for the past few years. I like that they have a durable coating that doesn't peel easily and maintains its shape. One of the best features is the detachable handle! I have three pans in different sizes, and it makes storage so convenient. However, I have noticed that the paint on the attachment area of the handle tends to peel off over time, so I hope they can improve that aspect in the future.
