Description

Fluffy oatmeal muffins made with oatmeal powder and honey, a low-carb ingredient gaining popularity for its diet-friendly properties.


Ingredients

  • 120g oatmeal powder
  • 50ml vegetable oil
  • 80 g honey
  • 2 eggs
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 30 g pecan nuts

Instructions

Preparation

  • Prepare muffin cups by lining them with parchment paper liners or spraying them with cooking spray.
  • Preheat the oven to 175°C (350°F).
  • Chop pecan nuts into large pieces.
  • Oatmeal Powder Muffins

    In a bowl, mix together the vegetable oil, eggs and honey.

    Sift in the oat flour and baking powder, add salt and mix until combined.

    Fill the muffin tin up to the eighth fill of the batter. Top with nuts.

    Bake in the preheated oven at 175°C (350°F) for about 18-20 minutes. Insert a toothpick and if it comes out clean, it's done.
