Oatmeal flour can be used to make fluffy sweets!
Oatmeal is a nutrient-rich and effective ingredient for dieting. It is a healthy and versatile ingredient that can be used in various recipes, including main dishes and desserts.
However, traditionally, oatmeal is sold with its grains intact, making it unsuitable for achieving a fluffy texture in items like bread or sponge cakes.
That's where oatmeal flour comes in.
Oatmeal flour is simply oatmeal ground into a powder form. When using oatmeal flour, you can achieve the same fluffy texture as using wheat flour.
We have previously introduced a pancake recipe using oatmeal flour, and we were amazed by the fluffy texture that was just as good as pancakes made with wheat flour.
Fluffy Muffins with Oatmeal Flour
Muffins turn out fluffy when oatmeal flour is used.
However, the finished product tends to have a distinct oatmeal aroma, which can be quite strong. For example, brown rice has a stronger aroma than white rice.
While the aroma worked well in pancakes, giving them a healthy appeal, it can be a bit overpowering in muffins, resulting in a somewhat uneven taste for a dessert.
To address this, I decided to use honey instead of sugar and top it with pecan nuts for another attempt.
As a result, not only did the nuts improve the texture, but more importantly, the honey did a wonderful job.
Honey has a strong, sweet, and distinct flavor, which complemented the oatmeal aroma beautifully. Also, when using oat flour, the texture can be a bit drier than with all-purpose flour. However, the moistness of the honey compensated for this, making it fluffy and moist.
Ingredients
- Oatmeal Powder - Powdered form of oatmeal. Most oatmeal labeled simply as "oatmeal" tends to be in granular form, so be sure to choose options labeled as "flour" or "powder." For this recipe, I used store-bought oatmeal, but you can also use a blender to grind granular oatmeal into powder.
The main ingredient of oatmeal, which is oats, is gluten-free. However, there is a high possibility of cross-contamination with wheat during the manufacturing process. If you have gluten allergies, please choose oat flour labeled as "gluten-free" to ensure safety. - Vegetable oil - Melted butter can also be used for a delicious result.
- Honey - Maple syrup can be used as a substitute.

Instructions
Preparation
- Prepare muffin cups by lining them with parchment paper liners or spraying them with cooking spray.
- Preheat the oven to 175°C (350°F).
- Chop pecan nuts into large pieces.
In a bowl, mix together the vegetable oil, eggs and honey.
Sift in the oat flour and baking powder, add salt and mix until combined.
Fill the muffin tin up to the eighth fill of the batter. Top with nuts.
Bake in the preheated oven at 175°C (350°F) for about 18-20 minutes. Insert a toothpick and if it comes out clean, it's done.
The finished result is fluffy, just like using regular flour!
Storage
at room temperature
Store in a container in a cool, dark place away from direct sunlight. The cookies can be kept for approximately 2-3 days.
refrigerated
When storing in the refrigerator, place the cookies in a storage container or cover them with plastic wrap. They can be refrigerated for about 3-4 days.
However, refrigeration may cause the cookies to become firm or dry. Therefore, if possible, it is recommended to store them at room temperature or in the freezer. When consuming, you can warm them up slightly in the microwave before enjoying.
Freezing
For freezing, it is best to wrap the cookies individually in plastic wrap or place them in an airtight freezer bag. Proper packaging helps prevent freezer burn and maintain their freshness. The cookies can be frozen for up to 1 month.
When you're ready to enjoy them, simply thaw them at room temperature or heat them in the microwave for a few seconds to bring back their delicious texture.
