When it comes to low-carb recipes, they often involve avoiding high-carb flours and using other low-carb ingredients as substitutes.

However, custard made with eggs and milk without the use of flours is naturally low-carb and can be a great option for those on a low-carb diet. Additionally, it provides a good source of protein, making it a simple and convenient dessert for those following a low-carb diet.

The problem lies in the caramel part of the pudding. One of the sweeteners used in low-carb recipes, called "erythritol," cannot be caramelized due to its properties.

(*Erythritol - a natural sweetener with zero calories and no effect on blood sugar.)

Sugar plays various roles in giving sweets their characteristic features. It can caramelize, moisten the dough, and add a golden color, among other functions. erythritol and other alternative sweeteners may not fully replicate these roles.

Therefore, making caramel is not possible with erythritol, and I decided to use instant coffee to achieve a caramel-like color instead.

Initially, I tried boiling erythritol and water to make a syrup and concentrate it, but it didn't work. Specifically, even though it seemed like the erythritol was boiling and thickening with water, it ended up forming lumps at the bottom after cooling.

As a solution, I opted for using gelatin to create the desired concentration, though it requires a little more effort.

Instructions

  • ½ teaspoon instant coffee
  • 1 g sheet gelatine (or ⅓ teaspoon powdered gelatine)
