Easy Lemon granita to make quickly in the summer
Here's a refreshing lemon sorbet recipe perfect for hot summer days.
All you need to do is squeeze fresh lemons, mix the juice with sugar, and freeze it to create a refreshing lemon sorbet that quenches your thirst on hot summer days.
While I love vanilla and chocolate ice creams, there are times when the punchy acidity of lemon can be a bit overwhelming, and I find myself opting for sweeter fruits like strawberries.
However, I adore lemon pound cakes, which also have a tangy flavor, and I could eat them anytime. It got me thinking that pound cakes contain ingredients like butter, yogurt, or heavy cream that help mellow down the acidity.
This particular recipe I learned in Italy, where a small amount of condensed milk is added to the lemon and sugar mixture. This addition mellows out the acidity, giving the sorbet a smoother and less sharp flavor. Additionally, the condensed milk helps prevent the sorbet from becoming too hard when frozen, so you can enjoy a soft texture even the next day without it turning into a rock-hard block.
Ingredients
- Water
- Sugar
- Lemon
- Condensed milk
Instructions
Cut the lemon in half and squeeze the juice.
Place water and sugar in a small saucepan and heat to dissolve the sugar.
Add condensed milk and stir to combine.
Add lemon juice and mix.
After allowing it to cool down, pour the mixture into a freezer-safe container and place it in the freezer.
Once it starts to solidify, take it out from the freezer and use a fork to scrape and mix it. Return it to the freezer again.
Before serving, mix again with a fork and serve in a glass.
Storage
The shelf life when stored in the freezer is about 1 to 2 weeks. When kept in a household freezer, it can become quite solid, so before eating, use a fork to break it up a little to make it easier to enjoy.
