Ingredients
- Milk - can be substituted with soy or almond milk.
- Honey - It's delicious with maple syrup as well. For those who want to reduce carbohydrates, you can use sweeteners like Erythritol.
- Eggs - You can make it without eggs, but adding them enhances the flavor and provides extra protein, so it's recommended.
- Pecan nuts - You can substitute with easily available nuts like almonds. You can also skip nuts, but adding them adds a crunchy texture, which complements the softness of the oatmeal as it absorbs the milk's moisture over time.
- Baking Powder - Adding baking powder gives it a fluffy texture, making it easier to eat, almost like bread.
- Bananas - Adding banana adds sweetness, allowing you to reduce the amount of sweetener. It also pairs well with blueberries, raspberries, apples, or other fruits.
- Oatmeal - You can use rolled oats (keeping their round shape) or quick oats (rolled oats finely chopped for easier cooking). Quick oats tend to absorb more moisture and make the batter stick together easily. Rolled oats provide a chewier texture, retaining the oat grain's texture, and create a softer texture for the non-oat parts. Personally, I recommend using rolled oats. (After some time, both types will absorb moisture and become similar in texture)."
- Chocolate chips - I used Callebaut chocolate.

What is Baked Oatmeal
Baked oatmeal is a dish made by combining oatmeal with milk and sweeteners, then baking it in the oven. It is a traditional recipe known for its self-sufficient lifestyle among the Amish community in America. Nowadays, it has become a popular breakfast menu throughout the United States.
The surface is crispy, while the inside has a moist and soft texture, similar to that of bread pudding. It's perfect for breakfast and makes a great healthy dessert as well.
Storage
The shelf life is about 3 days in the refrigerator. Before consuming, lightly reheating it makes it even more enjoyable to eat.
Variation
The basic ingredients are oatmeal, milk, sweetener, and baking powder.
- Chocolate Flavor - You can add 3 tablespoons of cocoa powder to the dough for a chocolate flavor.
- Gluten Free - Oatmeal itself is gluten-free, so this recipe is gluten-free. However, if the facility where the oatmeal is processed also handles products containing wheat flour, there is a possibility of cross-contamination. Usually, the oatmeal's packaging will indicate whether there is a chance of cross-contamination with wheat flour, so be sure to check before purchasing.
- Fruits - Adding berries will increase the moisture content, resulting in a soft and juicy texture. You can also include apples in the batter and add ½ teaspoon of cinnamon for a delicious variation.
Equipment
You can use any type of baking pan, whether it's square or round, for this recipe. However, avoid using a pan with a removable bottom as the batter is soft and might leak out.
You can also use muffin tins or individual cocottes to make single-serving portions.
