Fragrant Earl Grey sherbet
I tried making the Earl Grey milk tea sherbet recipe featured in the Japanese TV drama 'What Did You Eat Yesterday?'.
It's a recipe that combines strongly brewed Earl Grey tea with plenty of condensed milk. The preparation is very simple and does not require an ice cream machine.
It's a perfect treat for refreshing after a dinner, just like in the drama, and also makes a great snack on hot days.
Ingredients
- Earl Grey Tea Bags - Finely chopped tea leaves in tea bags are recommended to brew a strong Earl Grey in a short time.
- Water
- Milk
- Sugar
- Condensed milk - "It may seem like a bit much, but when you freeze it, it turns out to be just the right amount of sweetness.
Instructions
Bring a small amount of water to a boil in a pot, add Earl Grey tea bags, cover and let stand for 3 minutes.
After 3 minutes, remove the tea bag. It will be the base for the flavor, so make sure it has become a strong color.
Add sugar and stir to dissolve completely.
Stir in condensed milk and milk to dissolve.
Pour into a container and place in the freezer.
When it starts to harden, take it out of the freezer and stir it with a fork to scrape it off. Put it in the freezer again, and when it hardens again, stir it with a fork and repeat several times.
Serve it in a glass, and it's ready to enjoy!
Tips for making delicious milk tea sherbet
The freshly brewed aroma of hot Earl Grey and the intense sweetness of condensed milk become less pronounced when frozen. Before freezing, it's just the right balance of milk tea flavor. If you freeze it, the taste becomes somewhat muted and unsatisfying.
The key to making it delicious is to brew the Earl Grey strongly, almost to the point where you might think it's too concentrated, and then adding plenty of condensed milk. That way, you'll achieve the perfect taste!
Storage
The shelf life of the frozen milk tea sherbet is about 1 to 2 weeks.
When stored in a home freezer, it tends to become quite hard. To make it easier to eat, take it out of the freezer about 5 minutes before consuming and let it sit at room temperature for a while.
Variation
It would be delicious in a chai style with cinnamon, cardamom, cloves, and other spices in the tea.
Also, it's tasty to make it into a café au lait by using coffee instead of tea.
