Yogurt Bark: A Refreshing Frozen Dessert with a Healthy Twist. The term 'bark' in Yogurt Bark is derived from the English word 'bark,' meaning the outer covering of a tree. The frozen yogurt fragments resemble tree bark, hence the name 'Yogurt Bark.'
With yogurt as its base, Yogurt Bark is a healthier alternative to ice cream, with lower calories, fat, and sugar content. It's a versatile and stylish dessert recipe that allows for various creative toppings. Enjoy the simplicity and elegance of Yogurt Bark with your favorite toppings!
Ingredients
Berry Yogurt Bark
- Yogurt - For Yogurt Bark, you can use Greek yogurt or strained yogurt. Greek yogurt can be used as is. If using strained yogurt, place a sieve over a bowl lined with kitchen paper, add the yogurt, cover with plastic wrap, and refrigerate for 3-4 hours to strain the excess liquid.
- Sugar - You can use granulated sugar or white sugar. The amount is mentioned in the recipe, but you can adjust it to your preference.
- Frozen Mixed Berries - You can use either frozen or fresh berries.
Strawberry yogurt bark
- Yogurt (drained or Greek yogurt)
- Sugar
- Strawberry purée - Strawberry purée is a nice addition to the yogurt and adds flavor. If the strawberry purée is sweetened, you do not need to add sugar.

Instructions
Line a freezable container with a baking sheet.
Berry Yogurt Bark
In a bowl, mix yogurt and sugar.
Pour the mixture into the mold and spread it out thinly and evenly.
Top with frozen mixed berries and chill in the freezer for 2 hours to firm up.
Remove from the mold and cut with a knife or break into pieces by hand. Garnish with mint leaves if desired.
Strawberry yogurt bark
In a bowl, mix yogurt and sugar. (You do not need to add sugar if the strawberry purée is sweetened.)
Pour the mixture into the prepared container and spread evenly.
Add the strawberry purée and spread with a toothpick to form a marble-like texture.
Place the sliced strawberries on top and freeze for about 2 hours until firm.
Cheesecake-style yogurt bark
In a bowl, combine the yogurt, sugar, and lemon juice. Mix well.

Storage
The shelf life of Yogurt Bark when stored in the freezer is typically around 1-2 weeks.
Since it is frozen, it doesn't spoil like other snacks stored in the fridge or at room temperature, allowing for relatively longer storage. However, home freezers are frequently opened and closed, causing temperature fluctuations. Additionally, Yogurt Bark doesn't contain preservatives like commercially available ice cream, so it cannot be stored for extended periods.
To maximize its shelf life, it's important to minimize exposure to air. Once the Yogurt Bark is frozen, place it in a container and tightly cover it with plastic wrap or transfer it to a zip-top bag for storage.
Equipment
You can use any freezer-safe container as a mold.
In this case, since I didn't have a mold of the perfect size, I placed a square-shaped ring on top of a baking sheet. This way, I created a mold. If you have a baking dish or a suitable container of the right size, it would be even easier to use.
