This is a recipe for Gâteau au Chocolat that requires only chocolate and eggs.
Gâteau au Chocolat itself can be made with minimal ingredients, but sometimes you may find it troublesome to go out and buy butter or heavy cream.
That's why this recipe is perfect, as it only requires two ingredients! It's especially convenient during the winter season.
The resulting taste is lightly sweet and fluffy, with a simple flavor and texture that falls somewhere between cake and pastry.
With just two ingredients, you can still achieve a proper "cake," making it an excellent choice for those who truly want to make Gâteau au Chocolat easily.
Ingredients
- Chocolate - For this recipe, I used *Callebaut's 54.5% cocoa content chocolate. Of course, you can also make it with chocolate bars. It's equally delicious when made with milk chocolate, which is great for kids.
- Eggs.
*Caution! Callebaut's chocolate is in the form of chocolate chips for easy melting, but not chocolate chips for baking! ( chocolate chips for baking is highly resistant to heat and does not melt easily.)
Instructions
- Preheat the oven to 170°C (338°F) 10 minutes before baking.
- Line the baking pan with parchment paper.
In a bowl, melt the chocolate using a double boiler or microwave.
Add one egg yolk at a time to the melted chocolate and mix. (Be careful not to add the egg yolks to the chocolate while it is too hot, as it may cook the yolks and form lumps. Test the temperature of the bowl with your hand; if it's too hot, let it cool for about 5 minutes.)
In a separate bowl, place the egg whites and beat until stiff peaks form.
Add one-third of the meringue to the chocolate batter and gently fold it in using a rubber spatula, moving from bottom to top to avoid deflating the air bubbles. Add another one-third of the meringue and fold it in. Finally, add the chocolate batter to the bowl with the remaining one-third of the meringue and fold them together until well combined.
Bake in a preheated 170°C (340°F) oven for about 40 minutes. Insert a skewer and if it comes out clean, it is baked.
Storage
Wrap or store the cake in an airtight container in the refrigerator to prevent it from drying out. It can be stored for 2 to 3 days, but it may gradually become firmer over time.
However, it's best to enjoy the cake while it's fresh and fluffy, so I recommend eating it as soon as possible!
